Chemmeen Varattiyathu /Spicy Shrimp /Prawn Fry - My Version

A lip-smacking delicacy from Kerala (South India) Chemmeen Varattiyathu/ Shrimp/Prawns Stir Fry!!. It's very simple yet tasty..Shrimp/Prawns are marinated in  spices, then briefly stir fired on the stove together with onion and curry leaves. Yum! These spicy Shrimp/Prawns fry go well with rice or serve it as a special appetizer for a dinner party. Enjoy!


Recipe for Chemmeen Varattiyathu /Spicy Shrimp /Prawn Fry - My Version


Ingredients :


For Marinating :
Shrimp /Prawns /Chemmeen :1/2 kg/1 lb 
Ginger : 1 tsp
Garlic : 1 tsp
Red chilli powder : 2 tsp
Turmeric powder : 1/2 tsp
Salt to taste


For Sauteing :
Onion  : 1 (thinly sliced)
Green chillies : 3 (slit open lengthwise)
Curry leaves : 2 sprigs
Coconut oil enough for frying.


Method of Preparation:

1. Clean and marinate the prawns with the above listed marinating ingredients for 15-30 mins.
2. In a pan, cover and cook prawns with 1/4 cups of water till the prawns becomes fully dry with masala.
3. Heat coconut oil in a kadai /pan; preferably in 'manchatti' an earthen potadd sliced onions, slit green chillies and curry leaves, saute well till it turns to translucent.
4. Add marinated prawns into it; combine well and saute for 10-20 mins till it roast...Serve hot with rice & enjoy!

Notes : Using Coconut oil gives unique and authentic taste.
