Cabbage Thoran Recipe – Cabbage Stir Fry Recipe

Cabbage needs no introduction…but  thoran needs it. Thoran is stir fry-dry curry from Kerala. Cabbage Thoran is a usual visitor in Kerala’s regular meal and it’s as part of the Kerala Sadya menu served along with other dishes.

Needless to say we Keralites love to have  thoran in every day lunch menu. It is usually made from a variety of seasonal produces and backyard veggies.
Each thoran recipe is prepared in a variety of  way with different  combinations and  spices  but unavoidable ingredient in all these thorans is coconut, a staple of the Kerala diet because coconut trees grow abundantly.
Today I’m sharing classic Kerala style cabbage thoran -cabbage stir fry with coconut which is very to easy to make and delicious healthy dish. It goes well rice, rice gruel or chapathi .

Cabbage Thoran - A popular and common Kerala dry curry-stir fry served for rice along with other dishes.

Ingredients

  • Cabbage : 1/2 of one medium sized cabbage shredded or finely chopped
  • Small Red Onions /Shallots or Onion /Savola : 1/4 cup small size, chopped
  • Grated Coconut : 1/2 cup
  • Garlic : 2-3 pods finely chopped
  • Cumin : 1/4 tsp
  • Green Chillies : 3-4 slit lengthwise
  • Turmeric Powder : a pinch
  • Mustard Seeds : 1/2 tsp
  • Curry Leaves : a sprig
  • Salt to taste
  • Oil : 2 tbsp

Instructions

  • Using your hands mix grated coconut with turmeric powder,shallots,cumin seeds,garlic or you can just pulse 1 time everything together coarsely in blender.
  • Heat oil in a pan and splutter mustard seeds and when it starts to splutter; add curry leaves, slit green chilies and saute for a minute.
  • Add the shredded cabbage and saute and close and cook for a minute.
  • Add the coconut mixture and mix everything together.
  • Cover the pan and cook on low heat,stirring occasionally; After 5 minutes remove the lid and stir fry for another 5 minutes.

Notes

Do not add water while cooking cabbage; it will turn soggy.

    Ooops, I missed writing in the method,I have updated it..and thank you for bringing it to my notice.Saute green chillies along with mustard and curry leaves.I hope this answers your question.

    In the method of preparation the green chillies are not mentioned, are they ground in the coconut mixture or are they sauted with mustard and curry leaves?

    Ur Cabbage Stir fry looks awesome. Beautiful color. I make it too but without coconut. Also I squeeze in fresh lemon juice in the end when its cooked. This reminds me I have'nt made this cabbage subzi in a long time.
