Nadan Mutta Roast – Kerala Style Egg Roast – Dry Egg Curry Recipe

Egg roast is a simplest egg dish which is high in protein and very easy to make, you’ll want to keep it as part of your quick & easy cooking repetoire!! This easy egg roast can be made anywhere from mild to red-hot, depending on how much spice you prefer. it is equally delicious mild or hot. 

It’s a healthy and hearty dish that will awaken your senses and boost your mood.. This terrific side dish makes an excellent accompaniment mainly with Appam, Puttu or with any kind Indian Bread or even with steamed rice..Enjoy!


Nadan Mutta Roast Recipe | Kerala Style Egg Roast Recipe | Dry Egg Curry Recipe 

Preparation Time : 10 mins
Cooking time : 15 mins
Serves : 4

Ingredients:
Eggs : 4
Onions : 2 (medium, finely chopped)
Tomato Puree : 1 1/2 tbsp or Tomatoes : 2 (finely chopped)
Garlic :1 tsp (minced)
Ginger : 1 tsp (minced)
Turmeric Powder : 1/4 tsp
Kashmiri Chili powder : 1 tbsp
Red Chilli Powder : 1 tsp
Garam Masala : 1/2 tsp
Crushed Peppercorns : 1/2 tsp or Green chillies : 2 (Optional) (only if you want dish to be spicy)
Curry leaves : 1 sprig
Oil : 1 tbsp

How to make Kerala Egg Roast | Nadan Mutta Roast :

1.Boil the egg with 1 tsp salt or vinegar, deshell; make some slits over the eggs vertically and keep it aside. (Note : Adding salt or vinegar prevents cracking of eggs while boiling).
2. Heat oil in a pan and shallow fry the boiled egg turning it frequently for couple of minutes, or until they start to turn brown and set it aside.
3. In the same pan, saute the chopped onions till it turns to translucent.
4. Add ginger and garlic and saute for couple of minutes until the ginger garlic gives off its aroma, now add green chilies or crushed peppercorns,curry leaves and saute.
5. Add all spice powders except garam masla and saute till the raw smell is gone.
6. Add tomato puree or chopped tomatoes salt to taste and sauté till the tomatoes are smashed well and oil separates from the pan. (Note : You can add 1/4 cup water if you feel the mixture is too dry).
7. Add garam masala and mix in well.
8. Add the fried egg and toss it well (Note : Do not stir the mixture too hard after adding the eggs or the egg might crumble).
9. Cook it on a low heat for 4-5 minutes, stirring occasionally.Remove from the heat.
10. Delicious Egg Roast is ready to serve as side dish with Appam or with any Indian Bread .Enjoy!

    I love eggroast recipe always since my childhood and we made it today by seeing your recipe and finally got fantastic results!

    Egg roast is my all time favourite. I was thinking that it is difficult to make, but i was surprised to see it's so easy to prepare, but the final outcome was awesome & fabulous in taste.

    Love mutta roast now when i see them on blogs it reminds me of the breakfast we used to have in Allepy transport bus stop on the way to my father family home. we always had them with appom and mutta roast in the same canteen shop 😉
