Uppumanga Chammanthi Recipe – Uppumanga Chalichathu Recipe – Salted Mango Chutney

Who all are in favor of chammanthi/chutney? I do… What about uppumanga / brined mangoes? Oooh yes… And how about if we make Uppumanga Chammanthi? Yaaeeee!!!, Exactly, that is our today’s special!!! A blend of classic and comfort recipe straight from land of coconut (Kerala).

Whenever I taste chammanthi, I remember the saying. “chammanthi undankil, verorru curriyum venda”(means if there is chutney/chammanthi, you need not have any other curry). And often I related that statement as a laziness to cook more dishes, but ofcourse not!!!.
This is the chammanthi that my mom makes very often and I have no idea why 🙂 she used to pair it with kanji for a simple and comforting weeknight dinner. So this has been on my mind forever, but since we rarely get tender mangoes here I could not make one. But finally when I found these little cuites in Indian stores, I bought and did brine it. Oh yeah! your right, even I did a posting on how to brine mangoes.

To continue…., here u go the chutney with salted mangoes in brine . It’s a simple chammanthi /chutney to put together, and very flexible too. You can also choose to make it with grated coconut or without it – either way, it’s delicious. ENJOY!



Uppumanga Chammanthi Recipe-Uppilitta Manga Chammanthy Recipe-Salted Mango Chutney Recipe

Preparation time :  3-5 mins
Cooking time :  No Cooking
Serves : 4

Ingredients :

Uppumanga /Brined Tender Mangoes : 2-3 or if you using pieces 4-6 big pieces of brined mangoes
Fresh Grated Coconut : 3/4 cup
Small Red Onion /Pearl Onions : 3-5
Dried Red Chillies or Green Chillies : 3 (or to your spice level)
Fresh Ginger : small piece
Curry leaves : 1 sprig

How to make Uppumanga Chammanthi – Uppilitta Manga Chammanthy -Salted Mango Chutney:


1. In a blender or food processor; pulse & grind all the ingredients until well combined.
2. Transfer to a bowl; adjust the seasoning as needed. Serve with rice /Kanji /Rice gruel and Enjoy!

Uppumanga Chalichathu Recipe – Uppilitta Manga Chalichathu  Recipe – Brined Mango Chutney :
Preparation time :  3-5 mins
Cooking time :  No Cooking
Serves : 4

Ingredients : 
Uppumanga /Brined Tender Mangoes : 2-3 or if you using pieces 4-6 big of brined mangoes
Small Red Onion /Pearl onions : 4-5
Green Chillies or Dried Red Chillies: 3-5 or to your spice level
Curry leaves : 1 sprig
Coconut oil /Cooking Oil : 1 tsp (preferably coconut oil) 
Brine, to taste (Optional)

How to make Uppumanga Chalichathu – Uppilitta Manga Chalichathu – Brined Mango Chutney:


1. Crush the small red onion, dry red chillies or green chillies and curry leaves using a motar pestal  /arakallu and now add the brined mango pieces and corasely ground everything together.

(Or)

In a blender or food processor; coarsely ground all the ingredients, except oil and brine, until well combined.
2. Transfer to a bowl and stir in oil and adjust the seasoning as needed. Serve with rice /Kanji /Rice gruel   and Enjoy!

Notes :

  • No need for extra salt as the mango is salty.
  • If you prefer chammanthi to be pasty then add 1 tbsp more brine or as needed and adjust the seasoning.
