Vendakka – Okra Kichadi and Pachadi Recipe – Kerala Sadya Special

Vishu /Kerala New Year is Just Around the Corner! What are the plans to welcome the Vishu ? Festive season is a time for fun, good food and warmth and more.

Cooking during the festive season can be one of the joys of the season, and sharing and eating is something we look forward to all year long.

Pachadi / Kichadi is an essential side dish at any Kerala Sadya (Grand feast), whether it is a wedding or a religious holiday or a birthday. Pachadi and Kichadi is a side dish made from different vegetables like ginger, cucumber, pineapple, lady’s finger, bitter gourd or ginger. Difference between these two are…for pachadi we add the yogurt coconut mixture to it and whereas for Kichadi only yogurt used. For Kerala Sadyas (Grand feast) Pachadi /Kichadi is prepared the day before. 

I would love to share two ways of making Okra /Vendakka Kichadi and Pachadi /Fried Okra in a Coconut and Mustard Sauce; Baked and Traditional (Frying) method. You can choose between cooking it in the traditional method (frying), or popping it in the oven – either way, it’s delicious. I have tried making okra in both ways, I prefer baking and it makes the dish more healthier.

Makes a healthy side dish for vishu/onam sadya or for everyday weekday meals, where its taste will be sure to steal the show! Enjoy!
Vendakka Kichadi /Pachadi Recipe | Okra Kichadi /Pachadi Recipe – Baked & Traditional (Frying) Method – Kerala Sadya Vibhavangal  |Fried Okra in a Coconut and Mustard Sauce
Preparation Time : 5 mins
Cooking time : 10-15 mins
Serves : 4
Ingredients for Vendakka – Okra Kichadi : 
Okra /Lady’s Finger /Vendakka : 1 lb /1/2 kg whole okra or 2 cups okra, (uniformly chopped round slices)
Green chillies : 4-6 (finely, chopped)
Yogurt /Curd : 1 cup 
Oil :  3 tsp
Salt to taste
For Tempering: 
Mustard seeds : 1/2 tsp 
Dry Red Chillies : 2 nos
Curry leaves : few
Coconut Oil or Cooking Oil : 1 tsp

How to make Vendakka Kichadi | Okra Kichadi – Baked Version :

1. Wash and pat dry the vendakka /okra. Cut off the ends from the okra/vendakka and slice into uniformly into round slices.Combine the chopped okra along with chopped green chillies, salt and oil. 
2. Preheat the oven to 350° F/ 180° C. Line a aluminum foil on a baking tray and spread the chopped okra/vendakka slices over the greased baking sheet without crowding. 
3. Bake for 15 to 20 minutes; now change it to the broil mode and broil for couple of minutes or until they turn slightly brown and get crispy. (Note : Take care not to burn okra.) Allow them to cool.
4. When it cools down, add yogurt and mix well.
5. In a small frying pan; add oil and temper with mustard seeds, dry red chillies, curry leaves and add to kichadi.
6. Cover and set aside for at least 10 minutes to allow the flavors to blend and serve immediately with hot steamed rice.

How to make Vendakka Kichadi | Okra Kichadi – Traditional (Frying ) Version :
1. Wash and pat dry the vendakka/okra. Cut off the ends from the okra/vendakka and slice into uniformly into round slices.
2. Heat oil in a pan, add chopped okra, chopped green chillies and fry on medium-high until the okra is a slightly browned at the edges. Toss it about periodically, so that it does not burn. (It takes about 8- 10 minutes approx) When the okra is done, transfer it to a bowl and set aside. Do not cover. Allow them to cool 
3. When it cools down, add yogurt/curd and mix well. Adjust the salt. 
4. In a small frying pan; add oil and temper with mustard seeds, dry red chillies,curry leaves and add it the kichadi.
5. Cover and set aside for at least 10 minutes to allow the flavors to blend and serve immediately with hot steamed rice.

Vendakka – Okra Pachadi Recipe – Kerala Sadya Recipes

Ingredients for Vendakka – Okra Pachadi : 

Vendakka/Okra /Lady’s Finger : 1 1lb / 1/2 kg whole okra or 2 cups okra, (uniformly chopped round slices)
Grated Coconut : 1 cup
Cumin Seeds : 1/2  tsp
Green Chilly : 4-6 nos
Mustard seeds : 1/4 tsp
Yogurt /Curd : 1 cup (beaten)
Oil : 2 tbsp or  as needed for frying okra
Salt as needed

For Tempering : 

Mustard Seeds : 1/2 tsp
Dry red chilly : 2 nos
Coconut Oil :  1 tsp
Curry leaves : few




How to make Vendakka Pachadi | Okra /Lady’s Finger Pachadi : 

1. Wash and pat dry the vendakka /okra. Cut off the ends from the okra/vendakka and slice into uniformly into round slices.
2. Either cook it in the traditional method by frying the okra or pop it in the oven  for baked okra version. Just follow the above kichadi recipe steps for frying or baking okra.
3. Grind together, grated coconut, green chilly, cumin seeds and mustard seeds into a fine paste with little water added. Mix this paste with curd/ yogurt and set aside.
4. Heat the oil and splutter mustards, dry chillies and curry leaves. Reduce flame to low and add the yogurt-coconut mixture. Mix well to combine and adjust salt.
5. Add the fried or baked vendakka/okra. remove from fire.

6. Cover and set aside for at least 10 minutes to allow the flavors to blend and serve immediately with hot steamed rice.
