Kerala Style Prawns-Shrimp Roast|Nadan Chemmeen Varuthathu

Howdy folks! Who loves shrimp, raise your hand? Shrimp-Prawns Roast!

Well, I haven’t posted a Prawn/Chemmeen dish here in a while; so here goes yet another easy nadan prawn-chemmeen fry recipe from my sweet reader cooking repository, some of my readers send me recipes that they think I will like. Ranjitha Suresh, a dear reader of mine, who is from Kollam, Kerala (South India) sent me this recipe and asked me to try and I happily agreed.:) This is her family recipe,so it’s precious recipe indeed! Thanks Ranjitha for sharing the family recipe with all of us! Me and my family really loved it!
There are several different ways of making shrimp/prawns fry. Even i have posted my version long back. This one is the very simple yet delicious and purely nadan recipe… I guarantee! Without further ado, let me share the way of making Nadan Chemmeen Varuthathu/Easy Prawns Fry, which my family absolutely love to have with rice. Hope you all will try and enjoy this simple yet tasty prawn fry as much as we did! Don’t forget to share your feedback!:) So here it is, from Ranjitha Suresh and me to you all.Enjoy!

To grind into paste :
Shallots/Pearl Onions /Red Small Onion : 4-6 or substitute with one small sized onion
Ginger : 1″ piece
Garlic : 2-4 small cloves
Cumin Seeds : 1 tsp
Dried Red Chilly : 4-6 (or to your tolerance level) or use red chilly powder : 2 tsp
Turmeric Powder : 1/4 tsp
Whole Black Pepper Corns : 1/2 tsp  (add or reduce according to your tolerance level)
Lemon Juice : 1 tsp
Curry Leaves : few
Salt to taste

How to make Nadan Chemmeen Varuthathu – Kerala Style Prawn Fry :

1. Clean and de-vein prawns and keep it aside.

2. Grind
together all the ingredients listed above ‘To grind into paste’:
to a smooth paste, adding a small amount of water.
3. Marinate the prawns/shrimps with this above grounded paste and refrigerate it for 10 minutes to 1/2 hour.
4. Heat 2 tbsp of oil in a pan; add curry leaves and saute for couple of mins; add marinated prawn and combine well.
5. Just before frying mix in rice flour. (Note : This step is purely optional, by doing this,it will help to bind the masala well and also gives
brilliant crispy coating for these spiced prawns.)
6. Saute and cook till the water from prawn has been absorbed and the prawns are coated with the marinade.Stirring occasionally.
7. Drizzle remaning1tbsp of coconut oil and adjust the salt. Fry over very low heat for a few more minutes or till both sides are crispy. (Notes:Take care not to scorch the marinade.)
8. When the prawns start to crisp and turn golden brown remove from heat.Serve warm with steamed rice and enjoy!

Notes :

  • This is a very hot dish. Add or reduce chilli powder and pepper
powder according to your taste. Optional – To bring down the heat, if
you want can substitute red chilli powder with kashmiri chilli powder or
    paprika.
  • Using  coconut oil enhance the authentic taste and flavor.

Cheers!

Hi…I had tried this one before, and my husband and in-laws had loved it! This time I'm planning for a bigger group…with 2 kg prawns( before scaling). Would probably be around 1 kg scaled and deveined. Shall I double the recipe? Please let me know…

Made this dish today. Excellent. No matter how I fry shrimps, my daughter always says she wants it like grandmother makes it. For the first time, she said it tastes just as divine. Thank you for putting this on your website, Sangeetha. And a big thanks to Ranjitha Suresh for sharing her recipe. It was so easy to make.

    Dear Sangeetha
How are you ? Just rushed here after seeing the recipe at the facebook, and wrote it down,,,must cook, every thing is handy…Remembering your Chetinad pepper chicken, a party dish since nov 2009..of course I have changed the name to " Sangeetha's chettinad pepper chicken" because there is no dearth of Chettinad pepper chicken on the net…but yours is unique …with old age spending less time in kitchen , but cant stop reading recipes like reading a novel….without your supprot over last 5 yrs I wouldnt have a place in food blog , thank you so much…
