Pudina Chutney /Mint Chutney

Yesterday our neighbor gave us a bunch of Mint leaves from their garden. It is really hard to get a just plucked fresh bunch of mints, so I made an immediate decision to make chutney with them.
Mint is known for its refreshing aroma and also its many health benefits with one of its primary benefits being helping with digestion. If you want know to about health benefits of Mint take a look at here.

This chutney tastes great with Samosa, Kachori, Dosa, etc. This is a wonderful accompaniment as a side dish to most main dishes like Biryani, Tandoori chicken, Paneer Tikka, etc…So why do you want to wait friends do give it a try. You are going to love this aromatic chutney…Enjoy!

Recipe for Pudina Chutney /Mint Chutney

Ingredients :

Mint  Leaves : 1 1/2 cups (packed )

Small Red Onions /Shallots : 4-5
Green Chillies : 4-5 big (chopped)
Ginger : 2 tsp (chopped)
Garlic : 6 cloves (peeled & chopped)
Grated Coconut : 1/4 cup or chopped : 1/2 cup
Juice of 1 lemon or adjust accordingly for  tangy taste
Salt : 1/4 tsp
Oil : 1/4 tsp

Method of Preparation :

1. Remove stalks, clean and wash the mint leaves nicely, drain and keep aside.
2. Heat oil in a pan; add shallots, chopped green chillies, ginger, garlic and saute for couple of seconds.
3. Now add the washed mint leaves, toss in the oil for a minute and remove from the fire and let it cool. (Note : Take care – Do not fry for more than a minute you will lose the flavor and color).

4. In a blender add the cooled fried mint leaves along with grated coconut, salt and grind to a smooth paste.
5. Add the lemon juice instead of water, midway through the grinding. If required add another tsp or two of water.
6. Healthy mint chutney is ready!!! Serve with Idili, Dosa or Biryani or spread in sandwiches etc and Enjoy!!
